Today I'm going to share with you our all time favorite recipe as a family. When we changed to a WFPB diet over 3 years ago, we found a recipe similar to the one I am about to share. We tweaked it here and there until we got it just the way we liked it, and we have been eating it ever since. We eat it every week. We eat it for birthday dinners and special occasions. It never gets old and the whole family loves it.
So here it is. We hope you love it as much as we do!
Sweet Potato & Mango Bowls
2 Cups Short Grain Brown Rice
2 Cans Black Beans or about 2-3 Cups of Black Beans
3 Sweet Potatoes
2 Ripe Mangos
1-2 Avocados
1 Jalapeno (optional)
2-3 Limes
1 Jar Green Salsa
Peel, chop, and roast sweet potatoes at 400 degrees for about 1 hour. Toss occasionally to ensure even cooking.
Cook brown rice.
Peel and dice mango into chunks. Drain and rinse black beans.
Just before serving warm beans in the microwave for 2-3 minutes. Cut avocado and jalapeños. Cut limes in half.
To serve top brown rice with black beans, roasted sweet potatoes, mangos, avocado, jalapeños, lime juice, and green salsa. Enjoy!
