Thanksgiving 2020

Thanksgiving has become one of my new favorite holidays. I really love it, it has been super peaceful and intentional the last few years. We just stayed home, made and thankful turkey, made placemats, and made the most delicious and beautiful Thanksgiving Dinner. I feel like we have perfected a WFPB Thanksgiving.

My perfect Thanksgiving Dinner.

Kennedy and Ember helping make the dinner.

It snowed on Thanksgiving so the girls wanted to go out to play.

Kennedy and Daniel made the best placemats for our table.

Ready to feast. Happy Thanksgiving!

Fajita Quesadillas | Whole-Food, Plant-Based, Vegan & Oil Free

Although lunch is sometimes difficult, it doesn't have to be. We love making these quick and simple fajita quesadillas for lunch for the whole family. If you want to make it super simple you don't even have to make quesadillas, you can just put the refried beans and veggies topping on some cooked brown rice. Either way it is so delicious and satisfying.

Fajita Quesadillas

6 Food for Life Tortillas (or other oil free tortillas)

1 Can Refried Beans

1 Onion

2 Bell Peppers (Red, Orange, or Yellow)

2 Limes

Avocado

Spices

1 tsp. Chili Powder

1/2 tsp. Cumin

1/2 tsp. Smoked Paprika

1⁄4 tsp. Garlic Powder

1⁄4 tsp. Onion Powder

  1. Heat a pan over medium heat. Add onion and sauté for 3-4 minutes, adding a bit of water if the onion starts to stick. Add bell peppers and sauté until soft. Remove from heat. Add spices and the juice of one lime.

  2. Spread refried beans on two tortillas. Add bell pepper and onions on top of one tortilla, top with a second tortilla.

  3. Place on a clean hot pan or griddle and cook until golden brown. Flip and cook again. Cut into fourths and serve with smashed avocado & lime juice.

If you are looking for more delicious plant based meals to enjoy, I'm sure you will love my Ebooks Earth Fed Family and Whole Plant Foods. Each cookbook is filled with healthy whole-food, plant-based, oil free and vegan recipes that our family loves.

6 Beautiful Thanksgiving Books for Children

Just like in October where I shared a few of my very favorite Halloween children's books, I wanted to take a moment in November to share my favorite Thanksgiving children's books!

I love these Thanksgiving books. There are not as many Thanksgiving children's books as other holidays, but they are so good. I have loved finding new ones and love sharing the ones I remember reading as a kid. So here we go!

THE BERENSTAIN BEARS GIVE THANKS | JAN AND MIKE BERENSTAIN
CRANBERRY THANKSGIVING | WENDE DEVLIN
THANKSGIVING IN THE WOODS | PHYLLIS ALSDURF
SHARING THE BREAD | PAT ZIETLOW MILLER
A TURKEY FOR THANKSGIVING | DIANE DE GROAT

The last three on my list are my ultimate favorite. I love reading them every single time!

What am I missing. I use to be more on top of my children's literature game, but I am not as much anymore. Are there any great books that I don't know of?

Now I am excited for bedtime stories tonight!
