Avocado & Mango Sweet Potato Toast | Whole-Food, Plant-Based, Vegan & Oil Free


I love sweet potatoes. I love them in every way. One kind of unique way to eat sweet potatoes is to make sweet potato toast with them. It is quite simple to do, and there are so many different ways you can top them. Today I want to share one of my favorite versions - Avocado & Mango Sweet Potato Toast.

Avocado & Mango Sweet Potato Toast

3 Large Sweet Potatoes

1-2 Avocados

1 Lime

2 Mangoes

Black Beans

Green Salsa

Peel the sweet potatoes and slice into thin rounds (1/2 inch) or thin slices (1/4-1/2 inch). Bake in a 400 degree oven for 30-45 minutes. Watch so the edges do not burn and flip potatoes half way through.

While sweet potatoes are cooking smash the avocado with the lime and cut mangos into slices.

When the sweet potatoes are cooked all the way through remove from oven and set on a plate. Top with mashed avocado, mango, black beans and green salsa. Enjoy!
